MDL-78370 course: Allow fetching of only required course summary fields

* Add a 'requiredfields' parameter for
get_enrolled_courses_by_timeline_classification()
* Set default values for the following course_summary_exporter
properties:
  - summary (null)
  - summaryformat (FORMAT_MOODLE)
  - pdfexportfont (null)
